我用了" 天然麵包香" 一書, 裡面介紹的17小時低溫中種法做的.
我這食譜改編自咖啡麵包. 麵種雪了17小時後是硬的, 搓時有點不慣.
由於我是麵包新手, 我都是決定用回普遍的中種法.
"天然麵包香"的作者獨角仙在yahoo hk 也有blog, 得閒可以參考下.
